Green tomato chutney recipe

In our latest gardening programme we mentioned that Peter had a favourite recipe to use up his large green flesh tomatoes. Peter is a simple cook so this is so easy anyone can do it!!! Give it a try especially if you need some brownie points with the other half.
All the quantities are rough so you can adjust the mix if you like. It is quite probable that you will not have exactly 500g of tomatoes so scale quantities up or down.
You will need:
500g green tomatoes
250g sultanas
500g  red onion
250g brown sugar
2 tbsp Salt
1 tsp cayenne pepper
1 tsp ground green cardamom
500ml Malt vinegar

Method:
Roughly cut everything up and place in a good heavy pan.
Bring to the boil and then turn down the heat , simmer for approximately one hour when the mix should be reduced to a thick pulpy sauce.
Spoon into sterilised jars and stand for a while to cool.
We suggest you don't keep it too long but it will be great over Christmas with all those cold leftovers.
